There's a whole category of simulator games designed less to challenge you and more to calm you down, and they're perfect for offline play because they're all about routine rather than reflexes.

Fishing sims are the obvious entry point. The loop of casting and waiting maps beautifully to a phone, and the lack of urgency means you never feel bad about stopping mid-session.

But the category is wider than that — cooking, farming, terrarium building, all quiet loops you tend to. What they share is a rhythm that rewards patience and a design that works fine without a connection.
